WINING AND DINING



Wine and gourmet food connoisseurs can savor a wonderful five-course wine dinner Thursday at 7 p.m. at The Californian restaurant at The Hyatt Regency Huntington Beach Resort & Spa.

The Californian, not a typical hotel establishment, is an award-winning destination restaurant that offers a quarterly wine dinner series that has gotten raves from diners though remains one of the OC's best-kept secrets.

Chef Adam Navidi and his culinary team created a custom dinner that pairs premium wines from Caymus Vineyards in Napa Valley with enticing dishes from fall’s best offerings. Cost is $105 per person.

Here's a peek at the menu:

First Course: “24 Carrot Gold” lobster bisque with lobster "nugget." A lobster salad with foie gras lardoons served with French summer truffles and pickled sun chokes. Paired with 2004 Mer Soleil Chardonnay, Napa Valley.

Second Course: Crispy duck confit and smoked duck carbanora. Paired with a 2004 Caymus Cabernet, Napa Valley.

Third Course: Veal scaloppini variation followed by cognac braised lido veal cheeks and mano de Leon sea scallops with pome puree and golden chanterelles. Paired with a specially released, 2002 Caymus Cabernet, Napa Valley.

Fourth Course: Green apple granite (to cleanse the palate).

Dessert: Pistachio crusted, cannoli with whipped brie d mie and local Aliso Canyon honey comb, a California fig tart tatin with goat cheese candied lemon sorbet and port wine caramel, and a 36-month Fiscalini Bandage cheddar served with toasted brioche and apricot marmalade. All paired with a 2003 Caymus Conundrum, Napa Valley.
